Vinifiction
conducted in stainless steel vessels for 8-10 days and pumped
2-3 times daily. After devatting the wine is kept in steel,
facilitating complete malolactic fermentation.
Aging
tafter this second fermentation the wine is put in barriques
and 500l vats of French design where it will remain for
about 10 months. During this period the wine will be racked
in order to avoid sedimentary odours. After this period
of refinement the wine is left in storage in steel vessels
for 3-4 months. It is now ready for bottling.
